Olive oil categories
Extra Virgin Olive Oil. Acidity is up to 0.8%. This is top class olive oil with a perfect scent and flavour and is the product of the first crushing of olives using mechanical methods only. It does not contain any refined olive oils.
Virgin Olive Oil. Acidity is up to 2%. This is natural olive oil with a good flavour, produced using mechanical methods only. It does not contain any refined olive oils.
Olive Oil composed of Refined Olive Oils and Virgin Olive Oils. A mixture of refined and virgin olive oils, with a maximum acidity of 1%. Usually it lacks a strong flavour.
Olive Pomace Oil. A mixture of refine pomace oil and sometimes virgin olive oils. It is suitable for consumption but is best used only in cooking.
Virgin olive oil is oil produced using natural methods without any chemical processing.
Refined olive oil is oil subjected to chemical processing to improve its flavour and/or its acid composition.

Greece is the world's third largest olive oil producer (after Spain and Italy) with more than 140 million olive trees which produce around 400,000 tons of olive oil each year, 75%-80% of which is extra virgin olive oil.
This figure makes Greece the world leader in extra virgin olive oil production terms (Italy is second with 40-45% of its annual production being extra virgin olive oil and Spain is third with 25-30%).
Olive trees are primarily cultivated on mainland Greece, with the Peloponnese accounting for around 65% of annual production, as well as on Crete, the Aegean islands and the Ionian islands.
The Prefecture of Messinia in the Peloponnese is one of the few areas where olives are still picked by hand not using machinery.
